  • one bunch of kale leaves cut in small pieces

  • 2-4 tbsp raw cashew butter
  • half to 1 cup nutritional yeast
  • about 1-2 tsp paprika powder
  • about 2-3 tsp curry powder
  • hemp milk to get the consistency you want

Stick it in the dehydrator or in the oven on the lowest setting till it ‘s crunchy (do check often!)

My dads family comes from Indonesia and I grew up on Indonesian dishes. I’ve been craving Gado Gado for a while now, and made a raw version today for lunch! Gado Gado is made with cabbage, bean sprouts and green beans and potatoes. I prefer not to eat beans raw, there fore I used zucchini. For the patatoes I used an apple. The rice I replaced with cauliflower rice. The sauce is made with peanut butter, candle nuts, shrimp paste and soysauce. I made my own version.

  • 1 third of a cauliflower pulsed mixed with a little (Celtic) sea salt and celery leaves

  • 2 savoy leaves finely cut
  • 1 cup bean sprouts
  • half of a small zucchini cut in strips or diced
  • half sliced apple

  • half cup almond butter
  • 2 tsp tamari
  • 1-2 garlic cloves
  • 2 tbsp pine nuts
  • 1 tbsp sunflower seeds
  • half tsp sereh (lemon grass)
  • a pinch of laos
  • a splash of lemon juice
  • 1 tsp gula djawa (coconut sugar)
  • a bit of coconut milk or almond milk ( to get the right consistency)
  • a pinch of chili powder or sambal
  • Blend ’til you get a nice sauce.

Selamat Makan!
