Pineapple beignets

In Holland they make oliebollen/fritters with New Years. It’s like a family tradition to make pineapple beignets YUM! Tomorrow my niece will stay until the 2nd and of course I have got to make some for her. Now I made a raw vegan version of the pineapple beignets….they are so good!

Makes about 4

  • half cup buckwheat flour
  • half cup (home made) almond flour
  • 2 tbsp ground flax seed
  • 1 banana
  • sliced pineapple
  • sweetner (optional)
  • 2 tbsp pineapple juice
  • about 1 tbsp cinnamon


  • Mix buckwheat  and almond flour, banana, ground flax seed, cinnamon, pineapple juice. It will look like the picture.


  • take a slice of pineapple and coat it with the dough
  • Put it in the dehydrator or in the oven on the lowest setting until firm and no longer sticks to the sheet.

Wishing everyone a wonderful Christmas and a good and better 2013!

Two recipes this time; one raw vegan eggnog and a chocolate fudge.


  • 1 banana
  • 1,5 cup almond milk
  • 1 tsp noni juice
  • splash of vanilla
  • 1 date
  • pinch of ground clove, ground nutmeg and a tsp cinnamon
  • Blend all ingredients until creamy


Chocolate fudge:

  • 3/4 cup coconut oil
  • 2/3 cup cacao
  • 10 medjool dates (soaked in 1 cup (coconut) water)
  • 1 cup finely chopped hazelnuts
  • 1 cup finely chopped dried apricots
  • Blend dates with soak water.
  • add the cacao to the coconut oil and mix.
  • add date ‘syrup’ to the cacao mix.
  • add the hazelnut and apricots and mix.
  • put it in a shallow pan and stick it in the freezer until it’s hard/chewy
  • cut it small pieces and serve with this awsome eggnog or other drink of your choice

‘Egg’ salad in a cup

One of my friends (Mike Allen) on Facebook suggested to use noni juice  instead of nutritional yeast. Noni juice is raw and nutritional yeast isn’t and it’s supposed to have a more ‘cheesier’ taste. So, with this in mind, I made this recipe today. It turned out tasting like ‘egg’ salad :). Maybe it’s the combo I used with the Brazil nuts and the cauliflower that made it taste eggish. You can eat it for lunch, dinner or as an appetizer.

Start with the base (makes about 6):

You need something like this (small ones)


  • 2 cups ground flax seed
  • 1 cup almond flour
  • about half cup (filtered) water
  • 2 tbsp paprika powder
  • 1 tsp sea salt
  • 1 tsp garlic
  • Mix all ingredients and  make the base about half a finger thick
  • Stick it in the dehydrator or in the oven on the lowest setting until they are firm (not like a cracker) When they are done let them cool off in the baking pan.


  • half cauliflower finely ground
  • half red bell pepper finely chopped
  • half zucchini finely chopped


  • 200 gr/ 6.76 oz Brazil nuts (soaked)
  • quarter cup noni juice
  • 1 cup (filtered) water
  • half tsp tumeric
  • half tsp sea salt
  • 1 clove garlic
  • blend all ingredients
  • add the sauce to the cauliflower ( about 7-8 tbsp) or more if you prefer and mix
  • add the bell pepper and zucchini and you will get this ….Voilà

Simple green smoothie

This is a very delish smoothie. I used some orange blossom water in it and I’m hooked! Don’t know if it’s raw but it sure makes it taste good.

  • 2 bananas
  • half cup coconut milk
  • 1 glass of filtered water
  • 2 tsp orange blossom water
  • one handful of kale

Lazy afternoon

Had a lovely afternoon with Féline yesterday. She loved the fruit snack on a stick very much while watching her favorite DVD Hello Kitty.


I made some raw white raisin syrup as a replacement for the regular sweetener I use. It really tastes great and will try to make some out of dried apricots.

  • cup white sundried raisins soaked for a few hours in 1 cup water
  • half tsp cinnamon and half tsp vanilla
  • Blend raisins with soak water, cinnamon and vanilla.


Getting ready for the holidays and started on some new raw  cookie recipes. Hopefully, I’ll be posting the recipes in time for Christmas.


My water kefir is doing really great! It is so tasty and refreshing. It contains vitamin B1, B2, B6, B12, C, D & H.
