One of my friends (Mike Allen) on Facebook suggested to use noni juice instead of nutritional yeast. Noni juice is raw and nutritional yeast isn’t and it’s supposed to have a more ‘cheesier’ taste. So, with this in mind, I made this recipe today. It turned out tasting like ‘egg’ salad :). Maybe it’s the combo I used with the Brazil nuts and the cauliflower that made it taste eggish. You can eat it for lunch, dinner or as an appetizer.
Start with the base (makes about 6):
You need something like this (small ones)
- 2 cups ground flax seed
- 1 cup almond flour
- about half cup (filtered) water
- 2 tbsp paprika powder
- 1 tsp sea salt
- 1 tsp garlic
- Mix all ingredients and make the base about half a finger thick
- Stick it in the dehydrator or in the oven on the lowest setting until they are firm (not like a cracker) When they are done let them cool off in the baking pan.
Filling:
- half cauliflower finely ground
- half red bell pepper finely chopped
- half zucchini finely chopped
Sauce:
- 200 gr/ 6.76 oz Brazil nuts (soaked)
- quarter cup noni juice
- 1 cup (filtered) water
- half tsp tumeric
- half tsp sea salt
- 1 clove garlic
- blend all ingredients
- add the sauce to the cauliflower ( about 7-8 tbsp) or more if you prefer and mix
- add the bell pepper and zucchini and you will get this ….Voilà
